Lately, I bought a huge almond flour package and wanted to try as many recipes as possible. I tried cakes, muffins and now cookies. So here you are, a super healthy recipe for cookies lovers

Ingredients

  • 1 1/2 cup almond flour,
  • 3 Tbsp. coconut flour,
  • 3/4 tsp. baking soda,
  • Pinch salt,
  • 2 Tbsp. melted coconut oil,
  • 3 Tbsp. peanut butter (or another nut butter),
  • 1/4 cup + 2 Tbsp. pure maple syrup
  • Splash of pure vanilla
  • Dark chocolate chopped

Directions

  1. Preheat the oven 350 degrees F. à
  2. In a large bowl, combine almond flour, coconut flour, baking soda and salt and mix to combine.
  3. In another bowl, mix melted coconut oil (not hot), peanut butter, maple syrup and vanilla. Combine.
  4. Add the wet ingredients to the dry ones and mix. When it’s well combined, add the chopped chocolate.
  5. Shape your cookies into a thick circle and place them on a baking sheet. They won’t spread while cooking.
  6. Place your cookies in the freezer for about 10 minutes.
  7. Remove sheet from freezer and bake for 11 minutes.
  8. Allow your cookies to cool for at least 5 minutes.

When I have meetings in the morning, I am often in a hurry. Since I always like to have something to eat in my bag, I thought of making myself “breakfast muffins” that I could grab and go. I admit that I ate them all the time, except in the morning! Let’s keep this between us…

Ingredients
1 cup quick oats,
¼ cup unsweetened cocoa powder,
1 tsp baking powder,
½ cup unsweetened almond milk,
1 medium-size ripe banana,
2 tbsp maple syrup,
2 tbsp nut butter,
1 tsp vanilla,
2 tbsp chocolate chip (vegan or not, your choice).

Preheat your over to 350F and lightly grease individual sized ramekins with coconut oil.
Add the oats, the baking powder and cocoa powder to a blender and process on high until you get a consistency of fine flour.
Add all of the remaining ingredients except for the chocolate chips and process on high until the dough become smooth and creamy. Fold in the chocolate chip.
Divide the dough between the ramekins and bake for 30-35min. It’s ready when you insert a knife (or a toothpick) into the center and it comes out clean. Wait about 15min before enjoying.

Lately, I’m trying so many vegan recipes and I love sharing with you the ones that I prefer. So here is another healthy treat that you can eat without any guilt.

To make these chocolate brownies, you’ll need:

  • 1 can of black beans,
  • ½ avocado,
  • 1 cup of brown sugar or coconut sugar,
  • 3 tbsp cocoa powder,
  • ½ cup of walnuts (or almonds if you don’t have walnuts),
  • 1 tsp of baking powder,
  • 1 tsp of vanilla,
  • 1 tbsp of coconut oil,
  • salt,
  • 150g of dark chocolate (melt 120g, save 30g for topping)

You just have to mix all the ingredients together on a blender. Once it’s done, place the mix on a muffin pan and place it in the oven approximately 22min (180C / 350F).

To all those who are following me on snapchat or instagram, here you are ! I made a promise and I kept it.

  • You’ll need
    1 tbsp ground flax
    3 tbsp water
    ½ cup shredded coconut unsweetened
    ½ cup rolled oats
    ½ cup brown sugar or coconut sugar
    1 tsp baking powder
    ½ tsp salt
    ¼ cup mini chocolate chips (I used black 75%)
    ½ cup peanut butter
    1 tsp vanilla
    2 tbsp maple sirup

Preheat the oven : 350F.
In a medium bowl, mix the water and the flax and set aside for few minutes.
In another bowl, whisk together the coconut, rolled oats, sugar, baking powder, salt and chocolate.
Add the peanut butter, vanilla and maple to the flax until well combined together.
Mix all the ingredients together (I used my hands). If it’s too dry, add 1 tbsp of water (but it shouldn’t be dry, trust yourself). You’ll get a sticky dough (don’t be tempted, don’t eat it…yet).
Form the dough into balls about the size of golf balls then place them in a baking sheet and press down each one to flatten slightly. You can lightly wet your hands before doing this.
Bake them between 12min and 14min then let them cool completely before serving them.
