When I am invited to diner, I rarely go empty-handed. This weekend, I had to prepare something for Saturday night, I did not have much at home and I couldn’t go out. I had only almond flour and apples so I use them to make a cake and the result was great! Plus, it’s a healthy recipe again.
Ingredients
2 cups almond flour or crushed almonds,
1 tsp baking powder,
¼ cup of olive oil,
¼ cup honey,
1 tsp of vanilla,
2 eggs,
Zest of an orange,
2 apples, diced,
Almond chips to decorate.
Preheat oven to 320F.
Mix all ingredients except apples and almonds.
Add the apples to the mixture and incorporate them well.
Pour everything into a 20 cm baking tin that you have wrapped beforehand in parchment paper.
Garnish with the almond chips.
Bake 60 to 80 minutes – check after 45min to make sure the cake is still ok.
Let stand for 30min.

The recipe says 1/4 honey. Is that 1/4 cup?

Good, but 1/4 cup of honey isn’t enough. Going to double it next time or add 1/4 cup of sugar or agave nectar. Also, since it doesn’t indicate what size pan to use, I used an 8” round.

I was wondering if I make this in large cupcake size, do you think the cooking time would remain the same or how would I know that they are cooked?
This size is large so if you make smaller size, you’ll need to adjust cooking time

I also don’t have an orange, I have lemons, lime or grapefruit….it’s right up my Strasse so I’m keen to try…

thanks! I used yellow apples. they are sweet. Green apples contain less sugary taste than the yellow or the red ones.

Made this today, but I had some yummy smelling peaches near by, so I used them instead of apples, and I added some almond extract. Everyone loved it!! And they even said they would have never guessed it was gluten free! Thank you for this delicious recipe! I feel like there are all kinds of fun options to make with it!

Wow this is excellent! I added a few things. Used micro-planed tangerine peel from two fruits. Squeezed juice from one into the batter. Used avocado oil instead of olive. A few drops of almond extract gave it a grown up flavor. Used a handful of halved frozen cherries, firm Bosc pear plus apple and left on the peels. Used 8” springform pan and mine was half as tall as the photo. No need to parchment the sides with 8” pan. Generously sprinkled top with whole pecans. Baked 60 minutes. Really a winner!

Coconut flour also can be used as a substitute for almond flour in a recipe. Coconut flour can replace almond or wheat flours in any recipe. … You will also need to add 1 egg for every 1/4 cup of coconut flour used in addition to the eggs called for in the original recipe.

I made this using a can of Apple/Carmel apples. I used an 8X8 pan lined with parchment paper. Baked @ 320° for 80 min. It came out deliciously moist. I’ll definitely be making it again for us at home and to share with our friends.
In the US, an Amazon search for a 20cm baking tin came up with an 8″ Round Springform Cake Pan
20 cm = 8″ so it will work !
